Most people have never tasted a cider apple. That is not a criticism, just a fact. The bittersweet and bittersharp varieties grown for cider are not sold in grocery stores, and they are not pleasant to eat out of hand. They are too bitter, too tannic, too astringent for that.
Over the last several decades the industrial food system has steadily replaced them with sweet, shelf stable, consumer friendly dessert varieties. That is the problem with most apple cider vinegar on the market. It starts with the wrong apples.
The apple came first
Before we talk about vinegar, it helps to understand why cider apples exist at all. In England, France and Spain, apples were traditionally divided by use. Table apples were bred for fresh eating. Cider apples were bred for fermentation. The two were not interchangeable, and growers understood the difference at a fundamental level.
Cider varieties have characteristics that suit them to fermentation:
- High tannin. The same family of compounds that give red wine and strong tea their structure and grip.
- High malic acid. The primary acid in apples. It contributes sharpness and drives fermentation.
- Higher dry matter. Less water and more substance per unit of pressed juice.
Dessert apples, optimised for shelf appeal and for eating, were bred to reduce exactly these qualities. They are sweeter, thinner skinned and lower in tannin. A Honeycrisp is an achievement in consumer food science. It is not a good fermentation substrate.
What happens during vinegar fermentation
Making vinegar from apples happens in two stages. First, yeast converts the sugar in the juice to alcohol, producing hard cider. Second, acetic acid bacteria convert that alcohol to acetic acid. That is the vinegar step.
The key point is that vinegar does not start from nothing. It starts from cider. Everything present in that cider carries forward: the tannin, the aromatic compounds, the mineral character of the fruit. A vinegar made from cider apples begins with raw material that is richer in the things that create depth. A vinegar made from commodity dessert apples begins from a thinner baseline.
The tannin difference
Tannin is the part of this we can actually measure, so it is the part we talk about. We sent our vinegar and a supermarket apple cider vinegar to an independent laboratory and had both tested. What we will say here is the uncontroversial part: tannin concentrates in the skins and seeds of the fruit, cider varieties carry markedly more of it than dessert varieties, and that difference survives pressing and fermentation into the finished vinegar. Nothing is added and nothing is fortified. The source fruit is simply richer to begin with.
The industrial substitution
The shift away from cider apples happened gradually, and for understandable economic reasons. Cider orchards take years to establish. The trees are often smaller and less productive than commercial dessert varieties, and the fruit has little use outside fermentation. As industrial fermentation improved, and vinegar could be made in days rather than weeks, the pressure toward cheaper and more available raw material only grew.
Today the majority of commercial apple cider vinegar is made from commodity dessert apples, often culled or lower grade fruit, acetified by industrial aeration in a day or two, and diluted with water to standardise the acidity. That produces a consistent and affordable product. It does not produce a product made from real cider apples.
What the difference tastes like
This is not only chemistry. You can taste it.
POME is darker than supermarket apple cider vinegar, for the same reason red wine is darker than white. It has sharpness from the acidity, grip from the tannin, and a layered fruit character that dessert apple vinegar does not have. That is not marketing. It is the difference between starting with the right raw material and starting with a commodity substitute.
