Pome is sold in shops and used in kitchens that care where an ingredient came from. If that sounds like yours, we would like to hear from you.

We are a small Oregon producer. Everything is made and bottled here, in batches, from cider apples grown for fermentation rather than for eating. That means we can tell you exactly what is in a bottle and why, and it means we cannot supply everyone at once.

What you would be stocking

Three apple cider vinegars, each in 8 oz and 16 oz bottles, plus a three-bottle tasting collection.

  • Bittersweet. The foundation. Bittersweet and bittersharp cider fruit, for tannin and structure.
  • Barrel Aged. Roughly three years in oak, including barrels that previously held Oregon Pinot Noir.
  • Marionberry. Oregon marionberry over a traditional cider vinegar base.
  • Tasting Collection. All three together, in 8 oz or 16 oz.

All of them are raw, unfiltered, undiluted, and labelled at a minimum of 5% acidity. Every bottle carries a barcode. Shelf life is long and no refrigeration is needed, which makes them straightforward to hold.

Why it sells

Apple cider vinegar is a crowded shelf, and almost all of it is made from dessert and juicing apples. Ours is not, and the difference is measurable rather than a story: in a 2024 ETS Laboratories analysis, Pome Bittersweet measured 351.0 mg/L tannin against 100.9 mg/L in the tested dessert apple cider vinegar sample. That gives staff something concrete to say, and it gives a customer a reason to pick up a bottle that costs more than the one beside it.
